Where Stainless Food Blades Are Used

Stainless steel food cutting blades cover everything from cutting mutton, bone-in beef and poultry to vegetables and bread — in manual butcher shops as well as fully automated food machinery. Each application punishes the blade differently: bone-in poultry needs a knife that is simultaneously wear-resistant, sharp and tough, while vegetable and bakery cutting demands a corrosion-free surface that cleans down to food-grade standards.


440B and 440C: The Workhorse Grades

High-carbon martensitic stainless steels such as 440B and 440C are the standard choice. With a dedicated heat treatment cycle they reach HRC 50–62 while keeping the rust-free surface food plants require — the usual trade-off between stainless corrosion resistance and knife strength is precisely what the heat treatment has to solve. Flatness is held to 0.01 mm or better so the blade tracks true on automatic machines.

What to Check Before Ordering

• Grade and hardness certificate — insist on documented HRC and material composition.
• Finish: polished surfaces with no coating flaking risk in wet, salty environments.
• Geometry: circular, straight or special shaped, matched to your machine model and shaft diameter.
• Hygiene: easy-to-clean shapes with no hidden grooves where residue collects.
